Brendan Expands Local Cafe Business

Brendan Wrigley (2012) is continuing to build his reputation as a passionate local business owner, with plans underway to expand his much loved cafe, Cobb’s Coffee, into a second location.

For the past five years, Cobb’s Coffee has built a strong following for its quality coffee and welcoming atmosphere in the city’s CBD. Brendan is now looking to bring that same experience to a new location on the border of Newington and Ballarat Central, transforming the former Lange’s butcher shop into a boutique coffee outlet.

Having lived in the Newington and Redan areas for several years, Brendan has long been passionate about the neighbourhood and believes the community would benefit from a local café offering.

Finding the right site has taken time, with limited retail spaces available in the established suburbs along Pleasant Street. However, Brendan is excited about the opportunity to create a new gathering place for locals in a neighbourhood he believes has much to offer.

If approved, the new venue will reflect the familiar style of the original cafe, with a warm interior, generous street seating and a menu similar to the Lydiard Street location. A larger kitchen will also allow the team to expand their food offering.

With all permits now granted, construction is well underway and Brendan is hoping to have the space up and running by the end of April. The new space will be a smaller internal café than the existing site, with a stronger focus on a grab-and-go offering, while the larger kitchen will allow the team to produce all food in-house.
